आलू को आप सब्जियों के भारी-भरकम खानदान का सबसे बड़ा यात्री कह सकते हैं। इसका जन्म दक्षिण अमेरिका की एंडीज पर्वत श्रृंखला में पेरू और बोलीविया की सीमा पर स्थित टीटीकाका झील के पास हुआ। अमेरिकी वनस्पति विज्ञानियों का मानना है कि समुद्र तल से करीब 3,800 मीटर उंचाई पर स्थित इस झील के आसपास आज से सात हजार साल पहले भी आलू की खेती होती थी। खाद्य इतिहासकार रेबेका अर्ल कहती हैं, “आलू दुनिया भर में होता है और सभी लोग इसे अपना समझते हैं।” वे इसे दुनिया का “सबसे सफल प्रवासी” मानती हैं। आलू जहां गया, वहीं रच-बस गया। इसको चाहने वालों के लिए इसकी उत्पत्ति की जगह के कोई मायने नहीं हैं। यह सबका है और दुनियाभर में इसके दीवाने हैं। (Potato: A vegetable that conquered the world)
सोलहवीं सदी में स्पेन ने अपने दक्षिण अमेरिकी उपनिवेशों से आलू (Potato) को यूरोप पहुंचाया। 1740 तक यह जर्मनी, यूरोशिया और पोलैंड जबकि 1840 तक रूस पहुंच गया। ब्रिटिश द्वीपों से आलू पूरब की ओर बढ़ा और उत्तरी यूरोप तक फैल गया। 1650 तक यह बेल्जियम, नीदरलैंड और लक्जमबर्ग तक पहुंच चुका था।
आलू (Potato) की जन्म और दिग्विजय की यात्रा भले ही दक्षिण अमेरिका से शुरू हुई हो पर इसे चीन और रूस के बाद बाद भारत की आबो-हवा सबसे ज्यादा रास आयी। आज ये तीन देश ही इसके सबसे बड़े उत्पादक हैं। रूस में तो यह लोगों के मुख्य भोजन में शामिल हो चुका है। चावल, गेहूं और मक्का के बाद आलू दुनिया की चौथी सबसे अहम फसल है। गैर-अनाजों में इसका पहला स्थान है।
संयुक्त राष्ट्र की फ़ूड एंड एग्रीकल्चर एसोसिएशन (एफओए) के मुताबिक़ 1800 के दशक की शुरुआत में नेपोलियन कालीन युद्ध शुरू होने तक आलू यूरोप का सुरक्षित आहार बन गया था। इतिहासकार विलियम मैकनील के अनुसार 1560 के बाद यूरोप में जितने भी युद्ध हुए उनके बाद आलू का रकबा बढ़ता गया। इनमें दो विश्व युद्ध भी शामिल हैं।

यूरोपीय व्यापारियों के साथ भारत पहुंचा आलू
रूस और आयरलैंड के साथ भारत उन देशों में शामिल है जहां के लोग आलू (Potato) के बगैर भोजन की कल्पना ही नहीं कर सकते। लेकिन, आपको आश्चर्य होगा कि आज से करीब 500 साल पहले तक भारत में आलू का अस्तित्व ही नहीं था। मुगल बादशाह जहांगीर के जमाने में यूरोपीय व्यापारियों द्वारा इसे भारत लाये जाने के प्रमाण मिलते हैं। ये गोरे व्यापारी न केवल भारत में आलू को लेकर आये बल्कि इसका जमकर प्रचार भी किया। हालांकि परम्परावादी भारतीयों ने शुरुआत में आलू को ज्यादा भाव नहीं दिया। इसकी किस्मत पलटी वारेन हिस्टिंग्स के समय जो 1772 से 1785 तक भारत के गवर्नर जनरल रहे। आलू के रसिया हिस्टिंग्स ने इसका खूब प्रचार-प्रसार किया।

18वीं शताब्दी तक आलू (Potato) का भारत में पूरी तरह से प्रचार-प्रसार हो चुका था। उस समय आलू की तीन किस्में ही थीं। पहली किस्म के आलू का नाम फुलवा था जो मैदानी इलाकों में उगता था। दूसरे गोल आकार के आलू का नाम गोला था। तीसरे आलू का नाम साठा था क्योंकि उसकी फसल 60 दिन में तैयार होती थी। आगे चलकर ये तीनों देसी आलू के नाम से पहचाने गये। शिवालिक की पहाड़ियों पर इसकी खेती के नतीजे शानदार रहे, बम्पर पैदावार हुई। आज हिमाचल प्रदेश तथा उत्तराखंड के पिथौरागढ़, चम्पावत, अल्मोड़ा, बागेश्वर और नैनीताल जिलों में पैदा होने वाले पहाड़ी आलू के मैदानी क्षेत्रों में लाखों दीवाने हैं।
भारत में उत्तर प्रदेश आलू (Potato) का सबसे बड़ा उत्पादक है। इसके बाद क्रमशः पश्चिम बंगाल, बिहार, गुजरात, मध्य प्रदेश, पंजाब, असम, कर्नाटक, हरियाणा और झारखंड का स्थान है। भारत में आलू की दर्जनों प्रजातियां हैं। ज्यादातर किसान यह मानने को तैयार नहीं होते कि यह स्थानीय फसल न होकर विदेश से आया पाहुना है जो घर जंवाई की तरह यहीं का होकर रह गया है।
